All of their pasta is made with British stoneground flour from ancient wheat varieties (Spelt, Emmer and Einkorn), bronze extruded and slow dried at a low temperature. This method means the product keeps all the natural flavour and nutritional value of the grains.
They have been certified by the Soil Association for dry pasta production and source most of their flour directly from British farmers. They have opted for ancient wheat varieties like Spelt, Emmer and Einkorn as their farming is very beneficial for soil regeneration as well as being naturally resilient varieties. Pastificio Carleschi only use green energy to power their manufacturing site and the pasta is delivered to Sugar & Scoop in paper sacks.
